Fall Bucket List

Hey there!

Lately it seems like people are really talking about making changes in their lives that remind me of New Years’ Resolutions but doing it now rather than waiting.  I completely agree!  What is so magical about January 1st that we need to “wait” until that date to start eating healthier, starting a new workout plan, quitting a bad habit, getting bills under control…and the list goes on.  I think we should start now and be better for the new year!

On that note, I want to start enjoying life and the little things that make me happy more.  My absolute favorite quote is “Life is not measured by the number of breaths we take but the moments that take our breath away” so I’ve made a Fall Bucket List to enjoy a the wonderful things this season brings us. Life-not-measured-breaths-vinyl-wall-design

Fall 2015 Bucket List:

  • Make homemade pumpkin creamer
  • Go for a hike and take a family picture
  • Eat a caramel apple
  • Make pumpkin popcorn
  • Watch Hocus Pocus
  • Carve pumpkins
  • Bake pumpkin seeds
  • Make pumpkin bread & pumpkin cream cheese
  • Run through leaves
  • Eat an apple cider donut
  • Go apple picking
  • Take a fall road trip
  • Try a new restaurant
  • Make fall themed table decor
  • Eat pumpkin pancakes
  • Watch a scary movie
  • Make pumpkin risotto
  • Hand out candy for Trick or Treaters

Did Someone Say….Pumpkin?!?!

Oh how I love cooking and baking with pumpkin!  It adds fiber and lots of other nutrients without over-powering the dish.  I also love adding a dash of pumpkin pie spice the dishes because it definitely makes the house smell like fall.

Happy National Pumpkin Cheesecake day!

I know, I haven’t posted in a long time so what better day to start than National Pumpkin Cheesecake day?

Today combines two of my favorite foods into one dessert which is definitely exciting!

Unfortunately, I don’t have all the ingredients for pumpkin cheesecake but I can improvise.  I have all the ingredients for bread (and time to make it) so that’s what I decided to do.  I made a Chocolate Chip Pumpkin Bread with Pumpkin Cream Cheese Spread.

cream cheese doneBut first I had to go go for a run after work because I didn’t get up early enough this morning.  These dark mornings are really not helping my morning workouts.  Luckily tomorrow is Body Pump which I love so I will be up early for the 6am class.  Had a great run with the dogs and now they are tired dogs after our 5 miles run.  Watching me bake!

Wow where did summer go?


Oh yeah, we moved from Illinois back to Boise, Idaho, stayed in rental, bought a house, got married, bought a car and now we are finally trying to settle into normal life.  So many exciting times but I’m so excited to get back to routine and for the fall weather.  I just love the crisp evenings and pumpkin season is the best!

So speaking of routine, I have been having a very hard time getting up in the morning lately for a morning work.  What gives?  I am a morning person BTW.  Last night I set the coffee pot on auto for 5am and set my alarm for the same.  At 4:45am I woke up on my own was tired but forced myself up.  Once I fed the dogs, had some coffee and watched the news for a few minutes I was ready for my workout.

I went to the small gym at our community center thinking it would save time and gas but I was not impressed with the equipment (especially the treadmills) so I opted to give my joints a break and did the elliptical for 45 minutes.  It was so nice to be ahead of the game this morning and not rushing like usual.

Tomorrow I plan to put on my headlight and run with the dogs for 3 miles.  It’s still been too hot for them in the evenings so they are having a hard time keeping up.

This morning, I had my usual oats, flaxseed, chia seed and added in some pumpkin and cinnamon….tis the season!  And of course lots of coffee!
